Peanut Butter “Chips”

Often I hear students tell me they don’t like to eat too soon before class, yet feel lacking in energy before practice and need something to give them a little boost.  Often a low blood glucose level can contribute to feeling weak, or a little shakey when we practice, particularly in the hot room or when we embark on a more dynamic practice.  A healthy light snack, however, and a big glass of water can really help to fuel and hydrate your body in preparation for your class.  Try this easy to make recipe for a tasty little treat (pre and post practice).

Peanut Butter “Chips”


1-2 tbsp Agave, honey or maple syrup

1/3 cup coconut butter (easier to mix if melted gently)

Level desert spoon vanilla paste

1 1/2 cups peanut butter (smooth or crunchy) – you can use an alternative nut butter if you prefer

Small handful of your favourite nuts crushed (you can use a blender if you prefer a smoother consistency)

  1. “Grease” a rectangular baking pan with a little coconut butter (you can simply use your finger to smear on the butter).
  2. In a bowl, add your peanut butter, honey and vanilla paste – stir to a smooth (ish!) consistency.
  3. Add coconut butter/oil + nuts and mix until thoroughly combined. If you can not easily pour the mixture add a little water / honey / extra syrup.
  4. Pour into your baking pan, using a spatula or spoon. Approximately 1cm thick and as even as possible.
  5. Place in freezer until firm – this can take just an hour but the longer it’s freezing, the easier it is to slice.
  6. When ready, cut small 1-2 inch pieces into “chips”.
  7. Store your chips in a freezer compatible container and store in freezer.  These chips will melt if you keep them out!
Note you can also use these delicious chips in other baking recipes to give it that nutty, peanut butter added flavour.
